Coconut Muffins with Raisins

Ingredients

  • Butter - 3.5 oz
  • Farm fresh eggs - 2 pieces
  • Sugar - 5.3 oz
  • Vanilla salt - 1 teaspoon
  • Baking Powder - 1 teaspoon
  • Sour Cream - 7.1 oz
  • Desiccated coconut - 3.5 oz
  • Wheat Flour - 2 cups

Step by Step guide

Step 1

Melt the butter. Let it cool. Add sugar. Mix well.

Step 2

Add the eggs. Mix well.

Step 3

Add the sour cream. Mix well.

Step 4

In a separate bowl, mix the flour with vanilla and baking powder. Gradually add to the batter, mixing thoroughly.

Step 5

Add the shredded coconut to the batter.

Step 6

Grease the muffin tins with butter. Fill them 2/3 full with batter. Sprinkle 5–6 raisins on top.

Step 7

Bake in a preheated oven at 356°F for about 20 minutes.
