Ingredients
- Wheat Flour - 6.2 oz
- Butter - 8.8 oz
- Sugar - 6.2 oz
- Walnuts - 3.5 oz
- Farm fresh eggs - 3 pieces
- Cheese Spread - 4.4 oz
- Powdered Sugar - 7.1 oz
- Baking Powder - 1½ teaspoons
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease the bottoms of two 20 cm round cake pans. Sift the flour and baking powder into a bowl. Add 175 g of butter, sugar, and eggs, then beat until the mixture is soft and smooth.
Step 2
Prepare the coffee mixture from 2 tablespoons of instant coffee and 2 tablespoons of boiling water. Add this mixture and walnuts to the batter. Divide the batter between the pans. Bake in the middle of the oven for 30 minutes, until firm to the touch. Leave in the pans for 5 minutes, then turn out onto a wire rack.
Step 3
Meanwhile, beat the remaining 75 g of butter with mascarpone cheese and 1 teaspoon of instant coffee dissolved in boiling water (add just enough water to dissolve it). Add the powdered sugar, one tablespoon at a time, mixing after each addition.
Step 4
Spread half of the prepared cream on the first layer, carefully place the second layer on top, and spread the remaining cream over it. Decorate with walnut halves.
