Coffee Cookies with Chocolate Chips
Ingredients
- Butter - 1.8 oz
- Farm fresh eggs - 2 pieces
- Sugar - ½ g
- Wheat Flour - ½ cup
- Instant coffee - 1 teaspoon
- Starch film - ½ cup
- Baking Powder - 1½ teaspoons
- Liquid dark chocolate - 1.1 oz
- Vanillin - to taste
Step by Step guide
Step 1
Dissolve the coffee in 20 grams (4 teaspoons) of boiling water and let it cool to warm. Separate the egg whites from the yolks. Whip the egg whites with a quarter cup of sugar until stiff peaks form.
Step 2
In another bowl, beat the softened butter with the remaining sugar and egg yolks. Pour in the warm coffee and mix. Add the flour, starch, baking powder, vanillin, and chocolate chips. Stir to combine.
Step 3
Fold half of the whipped egg whites into the thick batter. Gently mix with a spoon. Add the second half of the egg whites and mix again with a spoon.
Step 4
Transfer the resulting batter into a plastic bag and cut off a corner. Squeeze the batter into small mounds on a baking sheet lined with parchment paper. Leave plenty of space between the cookies, as they spread significantly while baking. It is advisable to pipe this amount of batter onto 3 or even 4 baking sheets.
Step 5
Place in a preheated oven for 5-7 minutes. It is preferable to cool the cookies in the turned-off oven with the door slightly open, as they may sink a little when removed.
