Description

If I had an oven, I would gladly bake my own base, maybe even a sponge cake. By the way, coffee successfully replaces cocoa (bring a tablespoon of powder with a pinch of cinnamon, salt, and sugar to a boil in 200 ml of milk). Give it a try, I'm sure you'll be pleased with the result ;)

Ingredients

  • Ground Coffee - 4 teaspoons
  • Water - 7 fl oz
  • Cinnamon - to taste
  • Sour Cream - 7.1 oz
  • Egg white - 2 pieces
  • Powdered Sugar - 2.1 oz
  • Chocolate - 2.8 oz
  • Shortbread Cookies - 8.8 oz
  • Beans - 1 piece
  • Nuts - to taste

Step by Step guide

Step 1

Brew strong coffee with cinnamon and let it cool — we will need it to soak the "dough". I recommend adding a splash of aromatic strong alcohol: rum, liqueur, or brandy to the coffee.

Step 2

For the cream, whip the sour cream (it's better to use a fattier one) with half of the sugar. In a separate clean, dry bowl, whip the chilled egg whites with the remaining sugar until stiff, then gently fold them into the sour cream. Chop the chocolate into small pieces and mix it into the cream.

Step 3

Now it's time to assemble the future cake/individual pastries: in a suitable dish (ramekins or glasses seem like the perfect option, although the dessert will also be well-soaked, stable, and easy to serve in a traditional cake pan), lay down the first layer of cookies slightly soaked in coffee. Both shortbread and ladyfinger cookies will work, but avoid sugary ones — I'm afraid they will turn into mush instantly.

Step 4

For the second layer, spread cream over the cookies. You can sprinkle some chopped nuts on top and add a few slices of banana/peach/pear/berries to taste.

Step 5

Continue layering in the same order: cookies, cream, nuts, fruits. You can decorate the top layer with the same chocolate crumbs with nuts or, as in my case, sprinkle with coconut flakes.

Step 6

The cake needs to "rest" in the refrigerator for at least 10-12 hours.
