Coffee eclairs.
Ingredients
- Wheat Flour - 6.3 oz
- Margarine - 2.8 oz
- Water - 7 fl oz
- Farm fresh eggs - 8 pieces
- Salt - a pinch
- Milk - 17 fl oz
- Starch film - 0.7 oz
- Ground Coffee - 6 tablespoons
- Powdered Sugar - 6.2 oz
- Vanillin - to taste
Step by Step guide
Step 1
In a small saucepan, pour in the water, add the margarine and salt, bring to a boil, and remove the saucepan from the heat. Add the flour to the hot liquid and stir until smooth. Return to heat and cook, stirring, until the dough begins to pull away from the sides of the saucepan and forms a ball. Allow the dough to cool, then add 5 eggs one at a time, mixing thoroughly.
Step 2
Preheat the oven to 428°F.
Step 3
Grease a baking sheet with fat. Use a spoon or pastry bag to place the dough onto the sheet.
Step 4
Bake for 10-15 minutes, then reduce the temperature to 392°F and bake for another 15 minutes.
Step 5
Remove the eclairs from the oven and let them cool.
Step 6
Combine the powdered sugar, starch, vanillin, eggs, and milk, and whisk over a double boiler until the mixture thickens. At the end of whisking, slowly pour in the coffee. Once the mixture thickens, remove it from the heat and continue whisking until completely cool.
Step 7
Cut the eclairs and fill them with the coffee cream.
