Coffee Mousse Cake
Ingredients
- Butter - 3.5 oz
- Sugar - 12 tablespoons
- Farm fresh eggs - 4 pieces
- Vanilla salt - 0.4 oz
- Freshly brewed green tea - 12 fl oz
- Salt - a pinch
- Wheat Flour - 3.5 oz
- Cocoa Powder - 1 tablespoon
- Baking Powder - 1½ teaspoons
- Milk - 7 fl oz
- Corn Starch - 4 tablespoons
- Irish Whiskey - 1 fl oz
- Gelatin - 0.5 oz
- 10% cream - 7 fl oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a 25 cm diameter cake pan with butter.
Step 2
Brew the coffee and let it cool.
Step 3
Separate the egg whites from the yolks.
Step 4
Beat 100 grams of butter with 4 tablespoons of sugar until light and fluffy. Add 2 yolks one at a time, then add 100 ml of cooled freshly brewed coffee, vanilla sugar, and mix. Sift in the flour mixed with baking powder and cocoa, and mix well.
Step 5
In a separate bowl, beat 2 egg whites with a pinch of salt and 2 tablespoons of sugar until stiff peaks form. Gently fold the egg whites into the batter, pour into the pan, and bake until done.
Step 6
Transfer the baked sponge to a wire rack, prick with a fork, and soak with some of the remaining coffee. Allow to cool completely.
Step 7
Bring the milk to a boil.
Step 8
In a bowl, mix 2 egg yolks, 4 tablespoons of sugar, 200 ml of coffee, and cornstarch. Add this mixture to the milk while stirring, and cook until thickened. Let the resulting custard cool, then mix with dissolved gelatin and whiskey.
Step 9
Whip the cream to stiff peaks, mix with the custard, and separately beat 2 egg whites with 2 tablespoons of sugar, then gently fold into the custard.
Step 10
Place the sponge back in the pan, pour the custard over the sponge, and refrigerate the cake overnight. Then, run a knife around the edge to carefully remove the pan.
