Ingredients
- Sugar - 10.6 oz
- Wheat Flour - 4.2 oz
- Baking Powder - 1 tablespoon
- Activated Baking Soda - ½ spoons
- Salt - a pinch
- Whole egg - 4 pieces
- Vegetable Oil - 4 fl oz
- Vanilla extract - 1 tablespoon
- Instant coffee - 4 spoons
- Egg white - 6 pieces
- Semi-soft cream cheese - 8.8 oz
- Powdered Sugar - 4.2 oz
- Butter - 3 oz
Step by Step guide
Step 1
Brew 3 teaspoons of coffee in 125 ml of boiling water, stir, and let it cool.
Step 2
Sift the flour, baking powder, and baking soda together, then add 200 grams of sugar and a pinch of salt, and mix well.
Step 3
In another bowl, combine the egg yolks, butter, vanilla extract, and prepared coffee. Add the flour mixture and knead until a smooth dough forms.
Step 4
Whip the egg whites until soft peaks form; continue whipping while gradually adding the remaining sugar until stiff peaks form.
Step 5
Gradually fold the egg whites into the batter in three to four additions.
Step 6
Line a baking tray with parchment paper and grease it with oil. Evenly spread the dough on it. Bake at 356°F for 10 to 12 minutes.
Step 7
Mix 1 teaspoon of coffee with 1 teaspoon of boiling water and let it cool.
Step 8
Combine the cream cheese with the powdered sugar, softened butter, and coffee mixture.
Step 9
Remove the parchment paper from the cake layer and place it onto a new sheet of parchment paper, face down. Evenly spread the cream over the cake layer, leaving a little space at the edges. Roll the cake into a log, using the parchment paper to assist you. Chill it for 2–3 hours. Then trim the uneven edges and serve.
