Ingredients
- Walnuts - 2.6 oz
- Instant coffee - 1½ tablespoons
- Baking Powder - 6.2 oz
- Baking Powder - 1½ teaspoons
- Butter - 7.1 oz
- Golden caster sugar - 6.2 oz
- Instant coffee - 2 tablespoons
- Farm fresh eggs - 3 pieces
- Demerara Sugar - 1.8 oz
- Mascarpone Cheese Unagrande - 8.8 oz
- Semi-soft cream cheese - 7.1 oz
Step by Step guide
Step 1
Place the walnuts in an oven preheated to 338°F and leave for 7-8 minutes.
Step 2
Set aside 10 walnut halves for decoration, finely chop the rest.
Step 3
Sift the flour and baking powder into a bowl, add the butter, 175 g of golden sugar, and the eggs. Beat everything until smooth, then mix in the coffee combined with 2 tablespoons of boiling water and the chopped walnuts. Stir well.
Step 4
Divide the batter into 2 parts, place in greased and parchment-lined pans, and bake in the oven for 30 minutes at 338°F.
Step 5
Prepare the syrup: dissolve the demerara sugar and 1 tablespoon of espresso in 55 ml of boiling water.
Step 6
Prepare the cream: combine 1 tablespoon of espresso, mascarpone cheese, cottage cheese, and 1 tablespoon of golden sugar, mix well, and chill.
Step 7
Poke the baked layers with a fork all over while still in the pans, then pour the syrup over them. Only remove the layers from the pans once they have cooled.
Step 8
Spread half of the cream on one layer, cover with the second layer, and top with the remaining cream. Decorate with walnut halves.
