Colorful Blinnik
Ingredients
- Wheat Flour - 17.6 oz
- Milk - 10 fl oz
- Dry yeast - 1 tablespoon
- Light Beer - 10 fl oz
- Chocolate eggs - 5 pieces
- 20% Sour Cream - 3 tablespoons
- Sugar - 1 tablespoon
- Salt - 1 teaspoon
- Turnips - 2 pieces
- Frozen spinach discs - 8.8 oz
- Lightly Salted Red Fish - 1 piece
- Scallions - 2 stalks
Step by Step guide
Step 1
Mix the yeast with the flour.
Step 2
Add warm milk and room temperature beer.
Step 3
Mix well, cover with a towel, and let rise in a warm place for 1 hour.
Step 4
Boil or bake the carrots at 356°F, wrapped in foil, for 40 minutes. Peel and puree using a blender.
Step 5
Place the spinach in a hot skillet, evaporate all the liquid, and puree, then set aside in a separate bowl.
Step 6
Beat 3 eggs until frothy, add sugar, salt, and sour cream, beat again, and mix with the dough.
Step 7
Divide the dough in half. Add the carrot puree to one half and the spinach to the other.
Step 8
Let rise for 20 minutes.
Step 9
Cook the pancakes, greasing the skillet with butter (I greased it once; a non-stick skillet may not need greasing).
Step 10
Stack the finished pancakes in a pot under a lid.
Step 11
Beat the remaining eggs with a pinch of salt.
Step 12
Grease each pancake with the beaten egg.
Step 13
Layer them in a baking dish, alternating between carrot and spinach pancakes.
Step 14
Grease the top pancake with egg as well.
Step 15
Bake in the oven at 428°F for 10 minutes.
Step 16
Serve the finished blinnik with pieces of herring and green onions.
