We all know that the word 'sandwich' comes from the German language and literally means 'butter and bread'. But where does the baked good called 'Russians-Bread' come from in Germany, which is made from protein dough shaped like letters of the Latin alphabet? The history is quite convoluted. German researchers agree on the version that at one time in the Russian Empire, there was a cookie shaped like letters, and this is a direct translation from that. An alternative version states that the cookie appeared in Dresden in 1844 when a baker and pastry chef named John Smith opened his shop. However, Smith studied in St. Petersburg and claimed that he brought the recipe from the capital of the Russian Empire, hence the name 'Russian Bread'. Another legend points us to the very beginning of the 19th century, suggesting that it was invented in Vienna specifically for a meeting of Russian diplomats and was named in honor of the Russian tradition of greeting guests with bread. Finally, the third and most plausible version is this: 'russians' is a distorted word from 'crisp', and the cookie, made from egg whites and pressed onto a baking sheet in the shape of thin letters, was indeed delicate and crisp. But why bread? Here, it’s simple. In Germany, the term 'bread' used to refer to almost any baked good—as long as it contained a good amount of sugar.

  • Sugar - 5.3 oz
  • Cocoa Powder - 1 tablespoon
  • Vanilla salt - 1 tablespoon
  • Meyer Lemon Juice - 1 tablespoon
  • Ground Cinnamon - to taste
  • Wheat Flour - 5.3 oz
  • Salt - a pinch

Dip a cotton pad in lemon juice and wipe the mixing bowl and whisk with it.

Pour the egg whites into the mixing bowl, add 1 teaspoon of lemon juice and a pinch of salt, and whip until stiff peaks form.

Add sugar and whisk for 30 seconds, then add flour and whisk again, followed by adding cinnamon.

Line a baking sheet with parchment paper. Transfer the mixture into a piping bag.
