Cookies and Cream Ice Cream

Ingredients

  • 3.2% Milk - 7 fl oz
  • Heavy cream - 7 fl oz
  • Sugar - 2.8 oz
  • Salt - a pinch
  • Corn Starch - 3 teaspoons
  • Semi-soft cream cheese - 1.8 oz
  • Oreo Cookies - 3.1 oz

Step by Step guide

Step 1

Dissolve the cornstarch in 50 ml of milk.

Step 2

In a small saucepan, combine the remaining milk, heavy cream, salt, and sugar. Stir and place over medium heat, cooking almost to a boil. Pour in the cornstarch milk and cook, stirring constantly, until thickened. Remove from heat, add the cream cheese, and stir until smooth. Let cool to room temperature, then refrigerate overnight.

Step 3

Transfer to an ice cream maker and freeze according to the instructions, adding crushed Oreo cookies during the last two minutes of freezing. Transfer the ice cream to a container and place in the freezer for at least 4 hours until fully set.

Step 4

If you don't have an ice cream maker, immediately transfer the ice cream to a container, place it in the freezer, and stir the contents every 20-30 minutes until fully set. Serve by sandwiching a scoop of ice cream between two Oreo cookies.
