Cookies with persimmon and walnuts

Ingredients

  • Persimmon - 2 pieces
  • Wheat Flour - 2 cups
  • Sugar - 1 cup
  • Chicken Egg - 1 piece
  • Baking Powder - 1½ teaspoons
  • Cinnamon - ½ teaspoon
  • Ground Nutmeg - a pinch
  • Butter - 3.5 oz
  • Walnuts - 4.6 oz

Step by Step guide

Step 1

Wash the persimmons, cut them in half, carefully scoop out the flesh with a spoon, and remove all the seeds. Mash the flesh with a fork or blend it in a food processor. Mix the flour with the baking powder and add the spices — cinnamon and nutmeg. Chop the butter into pieces and beat it together with the sugar and egg. Add the persimmon puree to the butter mixture and mix thoroughly.

Step 2

Finely chop the walnuts with a knife or in a food processor. Add the flour and walnuts to the mixture of butter, sugar, and persimmon. Mix everything together.

Step 3

Preheat the oven to 356°F. Place a sheet of parchment paper on a baking tray. Put the dough into a piping bag and pipe neat circles onto the baking tray. Bake the cookies in the oven for 15 minutes.
