Description
Quiche is a wonderful option for breakfast or a light lunch snack. However, it does take a bit of time to prepare. The dough in this pie turns out almost like puff pastry and does not require much effort. If you don't finish the pie in one go, you can reheat it the next day in the oven, covering the dish with foil.
Ingredients
- Butter - 6 oz
- Water - 2 fl oz
- Salt - ½ teaspoon
- Tomatoes - 10.6 oz
- Canned Corn - 8.8 oz
- Hard Cheese - 3.5 oz
- Wheat Flour - 9.2 oz
- Milk - 2 cups
- Chocolate eggs - 10 pieces
- 20% Sour Cream - 2 cups
- Ground Black Pepper - to taste
- Thyme - to taste
Step by Step guide
Step 1
Prepare the dough. In a blender bowl, combine the flour, salt, and diced cold butter.
Step 2
Chop into crumbs.
Step 3
Pour in the ice water and chop until a dough forms. It should not be smooth.
Step 4
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Step 5
Once the dough is chilled, roll it out into a circle about 7–8 cm larger in diameter than the dish.
Step 6
Transfer the dough to the dish and trim the edges.
Step 7
Prick the dough with a fork, place a piece of foil on top, and add a weight (I used beans). This is to prevent the base from puffing up while baking.
Step 8
Place the dish in a preheated oven at 374°F and bake for about 25 minutes. Then remove the weight and bake for another 5 minutes until the dough is golden.
Step 9
While the base is baking, prepare the filling. Slice the tomatoes into thin half-moons.
Step 10
Grate the cheese on a coarse grater.

Prepare the filling mixture. In a large bowl, whisk together the flour (6 tablespoons) with 2 eggs until smooth, then add the remaining eggs, milk, sour cream, salt, pepper, and thyme.

Layer the bottom of the base with tomatoes, corn, and cheese.

Pour the filling over — not all of it may be used.
Step 14
Place the dish in the oven and bake until the filling sets, about 40–50 minutes. Cool in the dish.

Serve the quiche warm or at room temperature.
