Ingredients

  • Corn Flour for Polenta - 1.8 oz
  • Water - 2 fl oz
  • Salt - to taste
  • Olive Oil - 2 tablespoons
  • Herbes de Provence - to taste

Step by Step guide

Step 1

In a small bowl or deep plate, pour in the sifted corn flour.

Step 2

Add salt and Herbes de Provence.

Step 3

Pour in the olive oil.

Step 4

Mix the ingredients.

Step 5

Heat the water and pour it into the corn mixture when it's almost boiling.

Step 6

Using a fork, knead a fairly liquid dough. It's better to add the water gradually. Start by pouring in 50 ml, then add another spoonful if you see that it is still a bit crumbly. It's important to add as much water as the corn flour can absorb.

Step 7

Once the dough is kneaded, cover it with another plate and set it aside until it cools to room temperature.

Step 8

Meanwhile, preheat the oven to 356°F.

Step 9

Line a baking sheet with parchment paper and spread the cooled dough on it.

Step 10

Then, using a regular ruler, flatten the mixture so that it spreads evenly across the lined paper.

Step 11

Place the baking sheet in the oven for about 10–15 minutes. Keep an eye on the dough, as it cooks very quickly.

Step 12

Cut the sheet into squares or triangles while hot and let it cool.
