Ingredients
- Coarse Cornmeal - 3.5 oz
- Wheat Flour - 3.5 oz
- Chicken Egg - 1 piece
- Clarified Butter - 1.4 oz
- Whey - 4 fl oz
- Vanillin - a pinch
- Sugar - 1.8 oz
- Honey - 2 tablespoons
Step by Step guide
Step 1
Mix the dry ingredients: both types of flour with the baking powder.
Step 2
Beat the egg with sugar, add the butter and whey. Blend with a mixer or whisk. Gradually add honey and vanilla while mixing.
Step 3
Combine with the flour mixture. Gently fold together.
Step 4
Pour into a silicone muffin (or cupcake) mold, filling it 3/4 full. Place in a preheated oven for 15–20 minutes.
