Description
Flaxseed flour is rich in fiber (up to 30%), polyunsaturated fatty acids (Omega-3 and Omega-6), plant protein (up to 50%), vitamins B1, B2, B6, folic acid, antioxidants, and trace elements (potassium, magnesium, zinc). The amino acid profile of flaxseed protein is similar to that of soy protein.
Ingredients
- Corn Flour for Polenta - 1 cup
- Glutinous Rice Flour - 1 cup
- Jerusalem Artichoke - ½ cup
- Flaxseeds - 1 tablespoon
- Salt - to taste
- Vegetable Oil - 3 tablespoons
- Oranges - 1 piece
- Activated Baking Soda - a pinch
- Water - 2 cups
Step by Step guide
Step 1
Soak the flaxseed flour in a small amount of water and let it sit for 15-20 minutes.
Step 2
Mix the corn flour and rice flour together.
Step 3
Add the Jerusalem artichoke syrup or brown sugar, oil to the flax mixture, and stir.
Step 4
Add salt, baking soda, and combine with the flour.
Step 5
Blend the orange and add it to the batter.
Step 6
Blend the batter for a couple of minutes to achieve uniformity, adding the remaining water.
Step 7
Bake in a waffle maker until done.
