Ingredients
- Lemon - 1 piece
- Light Raisins, Seedless - 6.7 oz
- Chocolate eggs - 6 pieces
- Wheat Flour - 2 tablespoons
- Margarine - 3 tablespoons
- Sugar - 2 cups
- Cottage cheese - 2 lbs
- Activated Baking Soda - ¼ teaspoon
- Semolina - 4 tablespoons
- Powdered Sugar - to taste
Step by Step guide
Step 1
Wash the lemon, grate the zest, and squeeze the juice.
Step 2
Rinse the raisins and dry them.
Step 3
Separate the egg whites from the yolks.
Step 4
Sift the flour.
Step 5
In a bowl, cream the margarine with sugar, yolks, lemon juice, and zest until light.
Step 6
Pass the cottage cheese through a sieve or blend it in a blender, add it to the bowl, and mix.
Step 7
Add the baking soda, semolina, and flour.
Step 8
Whip the egg whites until stiff peaks form, gently fold them into the bowl, and mix.
Step 9
Add the raisins and mix again.
Step 10
Preheat the oven to 320°F.
Step 11
Line a springform pan with parchment paper, pour the batter into it. Bake the cake for about an hour.
Step 12
Cool the cake in the pan, then transfer it to a serving plate.
Step 13
Before serving, sprinkle with powdered sugar.
