Cottage Cheese Cake with Cherries
Ingredients
- Cottage cheese - 7.1 oz
- Chocolate eggs - 2 pieces
- Butter - 1.8 oz
- Vanillin - a pinch
- Meyer Lemon Juice - 1 teaspoon
- Erythritol - 1 tablespoon
- Semolina - 1 tablespoon
- Marinated cherries - 10 pieces
Step by Step guide
Step 1
Melt the butter in the microwave.
Step 2
Grease the baking dish with a teaspoon of melted butter.
Step 3
Pour the butter into a deep bowl and add a pinch of vanillin.
Step 4
Add the juice of a lemon wedge.
Step 5
Beat with a mixer for a few seconds, gradually adding the semolina.
Step 6
Then add erythritol (or sugar) and beat again.
Step 7
Add the eggs one at a time, beating well after each addition.

Then puree the mixture thoroughly with an immersion blender until smooth.
Step 9
Cut the cherries in half.
Step 10
Add them to the mixture and stir.
Step 11
Transfer the mixture to the baking dish and place it in a preheated oven at 356°F.

After 30 minutes, remove the cottage cheese cake and let it cool. If the mixture cracks, don't worry — it will settle as it cools.

Once the cottage cheese cake has cooled, cut it into portions and serve.
