Cottage Cheese Cake with Cherries
Ingredients
- Butter - 4.2 oz
- Sugar - 9.5 oz
- Wheat Flour - 7.1 oz
- Egg white - 5 pieces
- Salt - to taste
- Cottage cheese - 17.6 oz
- Gelatin - 4 teaspoons
- Milk - 8 fl oz
- Lemon - 1 piece
- Cream - 17 fl oz
- Marinated cherries - 7.1 oz
- Liquid dark chocolate - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
Mix the flour with the butter, 70 grams of sugar, and salt. Add 1 yolk and knead the dough. Place it in the refrigerator for 30 minutes.
Step 3
On a floured surface, roll out 2 discs. Bake the layers until golden brown.
Step 4
Soak the gelatin in cold water for 15 minutes. Heat the milk with sugar, salt, lemon zest, and yolks to a boil while stirring constantly. Remove from heat. Drain excess water from the gelatin and dissolve it in the milk mixture. Whip the cream. When the gelatin mixture starts to thicken, pour it into the cottage cheese and mix. Add the whipped cream and pitted cherries, and gently mix everything together. Place one layer in a springform pan. Spread the cottage cheese mixture on the bottom layer, smooth it out, and place the second layer on top.
Step 5
Put the cake in the refrigerator. Once set, remove the cake from the mold and pour chocolate over it.
