Description
In this recipe, you can use any fruits and berries. When using berries, caramelization is not necessary; just rinse them and distribute them with the cream over the cake base.

- Jelly Powder - 10 fl oz
- Gelatin - 1 packet
- Cottage cheese - 7.1 oz
- Sugar - 4.2 oz
- Concentrated Lemon Juice - 3 tablespoons
- Nectarines - 5 pieces
- Cream (40%) - 10 fl oz
- Butter - 4.4 oz
- Yubileynoye Cookies - 8.8 oz
Step by Step guide
Step 1
Make a thick jelly. For one packet (any flavor can be used, I took strawberry), use a large cup (300 ml) of cold water. Stir constantly and, without letting it boil, transfer it to a bowl and place it in the refrigerator until completely cooled.
Step 2
At the same time, dissolve the gelatin (for 1 packet, use half a glass of water). Let it swell for an hour, then squeeze it out and add it to the cooled jelly, mixing thoroughly.
Step 3
For the cake, take a springform pan and grease the sides and bottom with butter. Now, let's prepare the base. Melt the butter (I just left it on the table to reach room temperature), crumble the cookies, put them in a blender, and mix with the butter until a homogeneous mass is formed. Spread the mixture into the pan, level it out, and place it in the refrigerator to cool.
Step 4
Caramelize the nectarines. Cut some nectarines into small cubes, and leave some for decorating the top, slicing them into wedges.
Step 5
Heat a pan, pour in a little water, and add a couple of tablespoons of sugar. When the sugar turns brown, add the nectarines to the pan and wait for them to release their juice. Simmer in the juice for about 5 minutes and remove from heat.
Step 6
Blend the cottage cheese with sugar and lemon juice in a blender. Mix until all lumps are gone. Then add the cream and jelly to the cottage cheese, mixing everything into a thick cream.
Step 7
Spread half of the cream over the base, then place the nectarine cubes on top of the cream, distribute the remaining cream, and decorate with the remaining nectarines on top. In this case, you can vary the proportions of cream and nectarines to your taste and layer them in any order.
Step 8
Cover our beauty and refrigerate for at least 3 hours.
