Ingredients

  • Cilantro - 1 bunch
  • Egg white - 2 pieces
  • Marinated cherries - 5 pieces
  • Garlic - 3 cloves
  • Fiber - 1 tablespoon
  • Baking Powder - 1 teaspoon
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Soy Sauce - 1 tablespoon
  • Cottage cheese - 7.1 oz
  • Herbes de Provence - to taste
  • Cottage cheese - 7.1 oz
  • Eggplants - 1 piece
  • Bran - 1.4 oz

Step by Step guide

Step 1

First, take the eggplant and cherry tomatoes, slice them into thin rounds, lightly sprinkle with salt and herbs, and place them in the microwave for about 7 minutes (or in the oven). Once the vegetables are cooked, remove them from the microwave and drizzle with a little soy sauce, mix, and let cool.

Step 2

Preheat the oven to 356°F. Pass the cottage cheese through a sieve (you can vary the overall fat content of the casserole by choosing more or less fatty cottage cheese), grind the oat bran and fiber into flour in a coffee grinder and add to the cottage cheese. If you are not keen on bran, you can simply add 50 g of flour; I would recommend whole grain.

Step 3

Separate the egg whites from the yolks. Whip the egg whites into a stiff foam with a pinch of salt. If fat content is not a major concern for you, you can add the yolks to the cottage cheese and mix.

Step 4

Finely chop the cilantro, eggplant, and tomatoes, and add them to the cottage cheese. Squeeze in the garlic, add the baking powder, and mix thoroughly.

Step 5

Carefully fold the whipped egg whites into the cottage cheese mixture gradually; when the mixture becomes homogeneous, taste it and add salt, pepper, and herbes de Provence if needed.

Step 6

Pour the mixture into a baking dish (you can grease it with oil) and place it in the preheated oven for 45 minutes.

Step 7

Remove the finished casserole from the oven, let it sit and cool a bit. The key here is to control yourself and not dive into it immediately because the smell will be amazing!
