Description
In fact, it doesn't really matter which fruits and berries you use. It all depends on your preferences. It will also turn out great with peaches, strawberries, blueberries, and fresh blackcurrants. Alternatively, you can simply top the cheesecake with fruit jelly!
Ingredients
- Shortbread Cookies - 10.6 oz
- Butter - 4.6 oz
- Sugar - 3.5 oz
- Semi-soft cream cheese - 17.6 oz
- Chicken Egg - 2 pieces
- Salt - a pinch
- Natural Yogurt - 5.3 oz
- Lemon - 1.8 oz
- Blackberry - 13.4 oz
- Strawberry - 5.3 oz
- Vanilla salt - 1 tablespoon
Step by Step guide
Step 1
Crush the cookies into crumbs. Melt the butter and mix it with the cookie crumbs.
Step 2
Press the crumbs into a springform pan that has been greased with butter, packing them down firmly with a spoon or the bottom of a glass, and then place it in the refrigerator.
Step 3
Zest half of a lemon. Squeeze the juice from half of the lemon. Blend the cottage cheese in a blender until smooth and creamy.
Step 4
Place the cottage cheese in a large bowl, add sugar, yogurt, a pinch of salt, and vanilla sugar. Mix the cottage cheese mixture with a mixer until smooth. Add the lemon zest, pour in the lemon juice, and mix again.
Step 5
Add the eggs one at a time, mixing the batter well with a whisk after each addition.
Step 6
Pour the resulting cottage cheese cream into the tart shell. Smooth the surface with a spatula or spoon.
Step 7
Bake the cheese pie in a water bath. To do this, pour boiling water into a large deep baking tray. Place the pie dish into the tray with the boiling water.
Step 8
Bake for 1 hour at a temperature of 160–338°F. Remove the finished pie from the oven, let it cool, and then place it in the refrigerator for 4 hours.
Step 9
Blend the strawberries and half of the blackberries together until smooth. Spread the mixture over the pie, ensuring it is evenly distributed across the surface. Garnish the cheesecake with the remaining blackberries.
