Description

These cookies are especially delicious with dried cherries and ground hazelnuts. You can let your imagination run wild with the filling, using any dried fruits. If desired, you can sprinkle with powdered sugar.

Ingredients

  • Dried Apricots - 1.8 oz
  • Cottage cheese - 8.8 oz
  • Margarine - 7.1 oz
  • Chocolate eggs - 2 pieces
  • Wheat Flour - 2 cups
  • Activated Baking Soda - 0.2 teaspoons
  • Sugar - 1 cup
  • Meyer Lemon Juice - ½ teaspoons
  • Vegetable Oil - 1 tablespoon
  • Egg white - 1 piece

Step by Step guide

Step 1

Wash the dried apricots well, then soak them in cold water for 20 minutes. Drain on a paper towel and cut into small pieces.

Step 2

Separate the egg whites from the yolks. Pass the cottage cheese through a sieve. Melt the margarine in a water bath.

Step 3

Sift the flour into a bowl, add the baking soda, melted margarine, yolks, strained cottage cheese, and dried apricots. Mix everything thoroughly.

Step 4

Combine the egg whites, sugar, and lemon juice, and whip in a blender until stiff peaks form.

Step 5

Add the whipped egg white mixture to the dough and mix everything well.

Step 6

Divide the dough into 2 equal parts. Roll each part into a layer about half a centimeter thick. Whip the egg white with a whisk and brush the layers of dough with the whipped egg white.

Step 7

Roll each layer into a log and cut into small pieces about 1–1.5 cm thick. Shape each piece into a round cookie.

Step 8

Preheat the oven to 356°F. Place the cookies on a greased baking sheet, spaced 3 cm apart. Bake for 35–40 minutes.
