Ingredients
- Cottage cheese - 8.8 oz
- Butter - 8.8 oz
- Wheat Flour - 2 cups
- Whole egg - 3 pieces
- Activated Baking Soda - ½ teaspoon
- Sugar - 1 cup
- Egg white - 3 pieces
- Nuts - ½ cup
Step by Step guide
Step 1
Separate the egg whites from the yolks; place the egg whites in the refrigerator.
Step 2
Mix 1.5 cups of flour with softened butter or margarine. Incorporate the cottage cheese, egg yolks, baking soda, and add enough flour to form a soft, pliable dough that does not stick to your hands. Wrap the dough in plastic wrap to prevent it from drying out and refrigerate for a day (or at least for 30 minutes if short on time, until firm).
Step 3
Whip the egg whites into a stiff foam and gradually add the sugar. Finally, fold in the nuts crushed into small crumbs.
Step 4
Divide the dough into 4 parts. Roll each part on a floured surface into a rectangular sheet, 1-3 mm thick. (The thinner the dough is rolled, the more delicate the cookies will be). Spread a layer of meringue on top and roll it up.
Step 5
Cut the roll into slices 5-6 cm or 2 cm wide, depending on whether you want soft or crunchy cookies. Place the resulting pieces on a baking sheet (greased or lined with parchment paper) with 5 cm spacing between them.
Step 6
Bake in a preheated oven at 160-338°F until golden brown for 30-45 minutes.
