- Cottage cheese - 17.6 oz
- Butter - 5.3 oz
- Wheat Flour - 2 glasses
- Salt - ⅓ spoons
- Sugar - 1 glass
- Activated Baking Soda - 1 tablespoon
- Ground Cinnamon - 2 spoons
- Raspberry leaves - 3.5 oz
Step by Step guide
Step 1
Mix room temperature butter with the cottage cheese.
Step 2
Add the flour, baking soda, and salt. Knead the dough until it is soft and slightly sticky.
Step 3
Leave in the refrigerator for half an hour.
Step 4
Then take the dough, divide it into 2–3 parts (depending on how thick and large you want the croissants), and roll each part into a circle with a diameter of 30–35 cm.
Step 5
Mix the sugar with the cinnamon. Sprinkle part of the mixture over the rolled-out dough.
Step 6
Cut each circle from the center into 6–12 wedges (like a pizza). Place 1–2 raspberries on the wide end of each wedge, and carefully roll from that edge towards the inner corner.
Step 7
Line a baking sheet with parchment paper. Dip the formed croissant in the remaining sugar and cinnamon mixture and place it on the baking sheet with the sugar side facing up.
Step 8
Bake in the oven at 392°F until the croissants turn golden brown (about 25 minutes).
