Cottage Cheese Crostata with Ricotta and Cherry

Ingredients

  • Cherry - 5.3 oz
  • Sugar - 3.5 oz
  • 10% cream - 1 fl oz
  • Mascarpone Cheese Unagrande - 8.8 oz
  • Vanilla salt - to taste
  • Wheat Flour - 7.1 oz
  • Butter - 3.5 oz
  • Whole egg - 1 piece
  • Powdered Sugar - 1.8 oz
  • Water - 2 tablespoons
  • Salt - a pinch
  • Mint - 4 pieces
  • Chili jam - 4 tablespoons

Step by Step guide

Step 1

Grate the butter or chop it finely with a knife, add the sifted flour and all remaining ingredients for the dough. Knead a uniform, smooth, and elastic dough. If the dough is too dry, add 1–2 tablespoons of water. Cover with plastic wrap and refrigerate for 15–20 minutes.

Step 2

Meanwhile, prepare the filling. Beat all ingredients except for the cherries with a mixer until smooth.

Step 3

Remove the chilled dough, roll it out on a floured surface to a thickness of 4–5 mm, and place it in a round, buttered tart pan with a diameter of 20–25 cm. Even out the dough in the pan and trim the excess. Spread the filling on top and add the cherries (without juice).

Step 4

Place the tart in a preheated oven at 338°F for 50 minutes. Allow the finished crostata to cool, brush with jam, and decorate with berries and mint leaves.
