Description
Coconut flour can easily be substituted for wheat flour when it comes to cottage cheese dishes. However, be prepared that these fritters will fill you up faster.
Ingredients
- 9% Cottage Cheese - 15.9 oz
- Chicken Eggs - 2 pieces
- Sugar - 1.1 oz
- Salt - a pinch
- Coconut flour - 0.7 oz
Step by Step guide
Step 1
The cottage cheese needs to be passed through a fine sieve to make the fritters tender. I always use cottage cheese instead of farmer's cheese, as it contains less liquid and therefore requires less flour.
Step 2
Add the two eggs, sugar, and salt to the strained cottage cheese and mix everything thoroughly.
Step 3
Add the coconut flour and knead the dough. Coconut flour absorbs liquid very well, so much less is needed compared to regular wheat flour.
Step 4
Form small balls, about 2 cm in diameter, and place them on a silicone mat or on a lightly floured surface (with coconut flour).
Step 5
Heat a heavy-bottomed skillet over medium heat. I lightly greased the skillet with butter, but you can fry the fritters in a completely dry skillet.
Step 6
Fry the fritters in the skillet until golden brown (about 1-1.5 minutes on each side). Be careful, these fritters are very delicate, so you need to turn them over very gently.
Step 7
Preheat the oven to 356°F. Place the fried fritters on a baking sheet lined with parchment paper. Send the fritters to the oven for 5-7 minutes. They become denser in the oven. If you want softer fritters, you can skip this step :)
Step 8
Garnish the fritters with berries or any sauce and serve :)
