Cottage Cheese Kulich with Baking Soda
Ingredients
- Cottage cheese - 14.1 oz
- Chocolate eggs - 4 pieces
- Sugar - 2 cups
- Wheat Flour - 3 cups
- Activated Baking Soda - 1 teaspoon
- Vanillin - to taste
- Meyer Lemon Juice - 1 tablespoon
- Butter - 5.3 oz
- Raisins - to taste
Step by Step guide
Step 1
Blend the cottage cheese with a blender or rub it through a sieve. Add sugar. If you think the kulich should be very sweet, add 3 cups of sugar.
Step 2
Melt the butter and mix it with the flour.
Step 3
Lightly beat the eggs with a mixer.
Step 4
Combine the cottage cheese, butter with flour, eggs, and vanillin. Dissolve the baking soda in the lemon juice from a whole lemon and add it to the dough. Stir in the raisins (you can also add nuts, dried apricots, candied fruits...). The dough is ready.
Step 5
Take the baking pan you plan to use and cut a circle from paper for the bottom. If you are 100% sure about your pan or if you have a springform pan, you can skip this step.
Step 6
Place the paper circle at the bottom of the pan. Generously grease the bottom and sides of the pan with butter.
Step 7
Fill the pan with dough up to 2/3 full. The dough rises well, so do not overfill. Place it in a preheated oven at 356°F for about 45 minutes.
Step 8
Decorate with icing or cream.
