Cottage Cheese Muesli Bars with Cranberries
Ingredients
- Oat flakes - 7.1 oz
- Soft Cottage Cheese - 7.1 oz
- Cranberries - 3.5 oz
- Honey - 2 tablespoons
- Salt - a pinch
- Cinnamon - 1 teaspoon
- Lemon Zest - ½ teaspoon
- Chicken Eggs - 2 pieces
Step by Step guide
Step 1
Mix the oat flakes (less finely ground and minimally rolled), soft cottage cheese, add the eggs, honey, salt, cinnamon, and zest.
Step 2
Gently fold in the berries with a silicone spatula (cranberries can be replaced with any other berries, such as currants, raspberries, blueberries, etc.).
Step 3
Take a flat baking tray, line it with parchment paper or grease it with oil. Spread the mixture out in a rectangular or square shape (to make it easy to cut into portions).
Step 4
Bake at 392°F for 15-20 minutes. Once the mixture becomes firm enough, brush it with egg yolk.
Step 5
Once the freshly baked muesli is out, immediately (while they are still soft) cut them into portions with a knife.
Step 6
They can be served immediately or allowed to cool (about 2-3 hours or left overnight).
