Step 1
From 2 liters of sour milk, you get just the right amount of fresh cottage cheese, and you can use the whey to make pancake batter.

In a glass of warm water, dissolve the yeast and add a tablespoon of sugar. Allow the yeast to activate for about 15 minutes, no longer. Then, using a mixer, combine all the ingredients (add the whey until the consistency resembles that of liquid sour cream) and place the mixture in a warm spot for about an hour. You will need to stir the dough a couple of times to help it settle.

Add the whey, adjusting the consistency of the batter as needed. The batter should be as thick as fresh kefir and should bubble well.

Before serving, warm the triangles in butter and serve as usual — with sour cream, honey, or jam.
