Let's solve this puzzle once and for all: the root 'syr' in the name of this dish in most Slavic languages refers to various types of dairy products, including cottage cheese, but in Russian, it ceased to be used in that sense quite early. Cottage cheese pancakes are also known as curd fritters, but the essence remains the same: high-quality cottage cheese, a bit of flour, an egg, and sugar. It's also a good idea to add semolina during preparation: it helps the pancakes hold their shape and prevents them from turning into a curd mess in the pan. Before serving, you can gently warm the honey: it will become more pliable and interesting in flavor.

- Cottage cheese - 17.6 oz
- Chicken Egg - 1 piece
- Sugar - 2 spoons
- Semolina - 2 spoons
- Wheat Flour - to taste
- Salt - a pinch
- Vanillin - 0 oz
- Vegetable Oil - 1 fl oz
- Butter - 1.1 oz
- Honey - to taste
Step by Step guide
Step 1
Drain the cottage cheese through a cheesecloth if it is not dry enough. Then blend it in a blender for a smoother texture of the cheese pancakes.
Step 2
Add an egg, sugar, a pinch of salt, and vanillin to the cottage cheese, and mix well.
Step 3
Add semolina, mix again, and let it sit for 10–15 minutes to allow the semolina to swell.
Step 4
Roll the cottage cheese mixture into small balls and coat them lightly in flour.
Step 5
Heat vegetable and butter in a skillet.
Step 6
Fry the cheese pancakes on both sides until golden brown.
Step 7
Transfer the cheese pancakes to a baking sheet and place them in an oven preheated to 356°F for 10 to 15 minutes.
Step 8
Serve the ready syrniki either cold or hot with honey.
