Cottage Cheese Pie with Blueberries

Ingredients

  • Wheat Flour - 10.6 oz
  • Baking Powder - 2 teaspoons
  • Brown Sugar - 3.5 oz
  • Vanillin - a pinch
  • Farm fresh eggs - 2 pieces
  • Butter - 3.5 oz
  • Sugar - 4.4 oz
  • Semi-soft cream cheese - 14.1 oz
  • 10% cream - 7 fl oz
  • Fresh Berries - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F. Soften the butter and mix it with the brown sugar (if the butter is not soft enough, you can warm the bowl in the sink with hot water). Add the eggs and mix well until you have a homogeneous mass.

Step 2

Combine the flour with the baking powder and vanillin, then sift the flour mixture into the bowl with the egg-butter mixture. Knead the dough well.

Step 3

Grease the baking dish with butter, then press the dough into the dish with your hands, spreading and pressing it down (don't forget to poke it with a fork, and you can also cover it with parchment paper to prevent the dough from rising). Bake for 12 minutes.

Step 4

Prepare the filling by mixing the cottage cheese, sugar, vanillin, cream, and blueberries (you can use any blueberries, fresh or frozen, and even jam, but if using jam, remember that it is already sweet). I used crushed blueberries. Mix everything well to avoid lumps.

Step 5

Pour the filling onto the crust and place it in the oven for 30 minutes (you can increase the temperature to 392°F). The filling may be a bit runny, but don't worry — it will set when you take it out of the oven.
