Description

The base of the pie is a crispy sweet dough with feijoa and cottage cheese filling. The strawberry sauce gives the pie a unique aroma and a bright accent, so it is highly recommended to make it.

Ingredients

  • Wheat Flour - 7.1 oz
  • Butter - 3.5 oz
  • Chocolate eggs - 2 pieces
  • Feijoa - 10.6 oz
  • Brown Sugar - 1.8 oz
  • Sugar - 6.3 oz
  • Salt - ¼ teaspoon
  • Meyer Lemon Juice - 0 fl oz
  • Bacardi Lemon Rum - 1 fl oz
  • Freeze-dried strawberry powder - 8.8 oz
  • Cointreau - 1 fl oz
  • Corn Starch - 1 teaspoon
  • Semi-soft cream cheese - 10.6 oz

Step by Step guide

Step 1

For the dough, combine cold butter cubes with flour, salt, and brown sugar. Chop everything into crumbs (a blender helps a lot here, but you can also do it manually with a knife). You should get a crumbly mass of small lumps. Do not grind everything into flour.

Step 2

Add rum or cognac and a little cold water to the prepared mixture. You should get a dough ball that does not crumble but is not too wet either.

Step 3

Roll out the dough between two sheets of baking paper into a layer (5 mm thick), place it in a baking dish, prick with a fork, and put it in the freezer for 15–20 minutes. After that, place it in the oven (374°F) and bake until done for about 20 minutes.

Step 4

For the filling, remove the stems from the feijoa and chop the fruits into small pieces. Drizzle with lemon juice, sprinkle with sugar, and mix.

Step 5

For the filling, mix the cottage cheese (preferably 6–9% fat), eggs, and sugar, and blend everything until smooth.

Step 6

Evenly spread the feijoa over the baked dough base, pour the cottage cheese mixture over it, and place it in the oven (356°F). Bake for about 30 minutes until the filling becomes firm.

Step 7

While the pie is baking, prepare the sauce. For this, place the strawberries in a saucepan, add sugar and liqueur, and bring to a boil. Blend with an immersion blender until smooth. Then mix a teaspoon of cornstarch without a heap with 1 tablespoon of cold water and, stirring, pour it into the sauce. Heat the sauce slightly to thicken it, then remove from heat.

Step 8

Remove the pie from the oven, let it cool, and cut into pieces. Drizzle with sauce and serve. You can garnish with mint leaves.
