Meanwhile, pass the cottage cheese through a sieve and transfer it to a deep, wide bowl. Add the eggs, sugar, essence, and beat with a mixer until smooth (the mixture should be soft and viscous, like 20% fat sour cream).
Step 3
Cool the baked shortcrust base and pour the cottage cheese mixture into it. Reduce the oven temperature to 248°F. Bake the pie for 1–1.5 hours until the surface is evenly browned.
Step 4
Cool the finished pie, then refrigerate for 1 hour.
