Cottage Cheese Pudding with Nuts

Ingredients

  • Cottage cheese - 17.6 oz
  • Sugar - ½ cup
  • Chicken Egg - 1 piece
  • Breadcrumbs - 4 tablespoons
  • Chopped almonds - 1.8 oz
  • Raisins - 3.5 oz
  • Orange zest - to taste
  • Butter - 3 tablespoons

Step by Step guide

Step 1

Sift the crushed breadcrumbs through a sieve.

Step 2

Finely chop the nuts (or almonds, blanched in boiling water and peeled), roast in the oven until light brown, and grind in a mortar with 2 tablespoons of sugar.

Step 3

Remove the raisins from the stems and rinse them in warm water.

Step 4

To the strained cottage cheese, add sugar, 3 tablespoons of melted butter, egg yolks, ½ teaspoon of salt, lemon zest, and beat thoroughly with a wooden spatula. Then mix the cottage cheese mixture with the crushed breadcrumbs, nuts, raisins, and finally fold in the whipped egg whites.

Step 5

Grease the pudding mold with butter, sprinkle with sugar, and fill with the cottage cheese mixture. Fill the mold to ¾ full, cover with a lid, and place in a larger pot with water (the water should reach only halfway up the mold). Place thick paper or double-layered cheesecloth at the bottom of the pot. Cover the pot with a lid and cook the pudding for about an hour, adding a little water as it evaporates.

Step 6

An even firmness of the risen cottage cheese mixture that slightly pulls away from the edges is a sign that the pudding is ready. Carefully unmold the pudding onto a plate and serve hot with fruit syrup or sour cream.
