Description
Cottage cheese pudding with raisins and apples is a versatile dessert and breakfast option at the same time. It can be served solo or with sour cream, condensed milk, or jam. To achieve a uniform consistency in the pudding, it is essential to strain the cottage cheese through a sieve beforehand. While it’s easy to choose apples for the pudding, selecting raisins requires more careful consideration. The dried fruit should have a thin skin and firm flesh with a pronounced grape aroma. The combination of cottage cheese, raisins, and apples gives the baked dish a natural sweetness and pleasant flavor, and with semolina, it rises quickly in the oven. Interestingly, pudding was originally not a dessert at all but an extremely hearty delicacy made from porridge in meat broth, with added breadcrumbs, prunes, nuts, and honey. It was prepared with lamb fat, blood sausage, mixtures of offal, and various types of meat, and was often set on fire before serving. Today, pudding is almost always a sweet dessert, airy, light, and almost dietetic.
