Ingredients

  • Butter - 10.6 oz
  • Water - 4 fl oz
  • Milk - 4 fl oz
  • Wheat Flour - 5.3 oz
  • Farm fresh eggs - 5 pieces
  • Sugar - 0.4 oz
  • Salt - 0.2 oz
  • Vanilla salt - 0.1 oz
  • Powdered Sugar - 5.3 oz
  • Cottage cheese - 14.1 oz

Step by Step guide

Step 1

To prepare the dough, heat the water in a pot, add the milk, 100 g of butter, salt, and sugar. Once the mixture comes to a boil, remove the pot from the heat and sift in the flour.

Step 2

Stir the dough with a silicone spatula until smooth. Return the pot to the stove and heat over medium heat, stirring with the spatula until the dough begins to form a single mass.

Step 3

In the warm dough, add the eggs one at a time, mixing well.

Step 4

Transfer the dough to a pastry bag fitted with a star tip and pipe rings onto a baking sheet lined with parchment paper.

Step 5

Bake the rings at 200-428°F for about 10 minutes, then at 356°F for another 20-30 minutes.

Step 6

Once baked, transfer the rings to a wire rack and cut them in half.

Step 7

For the cream, whip 200 g of room temperature butter with powdered sugar, vanilla sugar, and cottage cheese. Fill a pastry bag with a long tip with the cream and fill the cooled rings. Before serving, dust them with powdered sugar.
