Cottage Cheese Roses Pie
Ingredients
- Butter - 3.5 oz
- Sugar - 3 tablespoons
- Ocean salt - ½ teaspoon
- Dry yeast - 0.4 oz
- Milk - 7 fl oz
- Baking Powder - 1 teaspoon
- Wheat Flour - 14.1 oz
- Potato protein - 5.3 oz
- Whole egg - 1 piece
- Cottage cheese - 14.1 oz
- Chicken Egg - 1 piece
- Raisins - 3.4 oz
- Vanilla salt - 4 tablespoons
Step by Step guide
Step 1
Mix sugar, yeast, and warm milk.
Step 2
Stir and let it sit in a warm place for about 15 minutes.
Step 3
Beat the eggs with a blender.
Step 4
Combine half of the sifted flour, all the starch, and salt. Mix the wet and dry ingredients together. Add melted butter and mix the dough.
Step 5
Add the remaining sifted flour and knead the dough. Shape it into a ball.
Step 6
Cover with plastic wrap and place in a warm spot to rise.
Step 7
It should be a warm, 'quiet place' without drafts. I like to use the microwave: I place it in a preheated microwave and leave a small gap to peek at the dough rising. The rising time depends on the quality of the yeast and flour; on average, it takes about an hour.

Meanwhile, for the filling, mix the cottage cheese with the beaten egg, sugar, vanilla, and raisins. Mix well.

The dough has risen beautifully; I take it out and place it on a floured work surface.

Divide the dough into several pieces.
Step 11
Roll each ball of dough into a circle (it doesn't have to be perfectly shaped; any imperfections will not be noticeable later). Make 4 cuts.

Place a spoonful of filling in the center.

Now I start to form the roses: I take one petal and wrap it around the filling.

Then I take the second petal and wrap it in the same way. You can alternate petals; I prefer the first option for a more voluminous look.

Then the third petal... I wrap it as well.

And the fourth petal...

And here is the rosebud; I gently shape the petals with my hands, bending them slightly to resemble a rose.

I do the same with the remaining dough.

Then I place the formed roses in a greased baking dish. I brush the surface of the pie with beaten egg yolk and sprinkle with sesame seeds.
Step 20
Now let it rise in a warm place for 30–40 minutes, then bake in the oven at 392°F for 40 minutes. The time may vary depending on your oven. In general, check for readiness with a toothpick; if it comes out dry, the pie is ready.
