Cottage Cheese Tiramisu
Ingredients
- Egg white - 3 pieces
- Semi-soft cream cheese - 8.8 oz
- Salt - a pinch
- Instant coffee - 10 fl oz
- Powdered Sugar - 5.6 oz
- Brandy - 1 fl oz
- Cinnamon - 1 piece
- Ladyfinger Cookies - 16 pieces
- 70% Dark Chocolate - 3.5 oz
Step by Step guide
Step 1
Brew strong coffee, add a cinnamon stick, let it cool, and add 30 ml of brandy.
Step 2
Separate the egg whites from the yolks. Whisk the yolks with one-third of the powdered sugar in a heatproof bowl over a water bath until pale yellow, add a teaspoon of brandy, and whisk for a couple more minutes until smooth. Remove the cream from the heat and whisk for another 5 minutes until thickened and cooled.
Step 3
Lightly whisk the cottage cheese and fold it into the yolk cream, mixing until smooth.
Step 4
In a separate bowl, beat the room temperature egg whites with a pinch of salt on low speed, then increase the speed and gradually add the remaining powdered sugar. Whip until stiff peaks form. Gently fold the cottage cheese cream into the whipped egg whites (one spoonful at a time), mixing both mixtures carefully.
Step 5
Line the bottom of bowls or dessert cups with ladyfinger cookies soaked in coffee and brandy (break the ladyfingers in half if necessary to fit into small serving bowls). Top with a layer of cottage cheese cream and grate dark chocolate over the cream. Repeat with a second layer, alternating cookies, cream, and grated chocolate. Refrigerate the dessert for a few hours, preferably overnight before serving.
Step 6
Serve with a cup of ristretto. Optionally, garnish with berries depending on the season.
