Cranberry Crumble Bars
Ingredients
- Brown Sugar - ¾ cup
- Wheat Flour - 1 cup
- Ground Oats - 4 oz
- Salt - ¼ teaspoon
- Granulated sugar - ½ cup
- Orange juice concentrate - ¼ cup
- Water - ¼ cup
- Dried cranberries with sugar - 11.3 oz
- Orange zest - 1 tablespoon
- Ground Cinnamon - ½ teaspoon
- Butter - 4.2 oz
Step by Step guide

Preheat the oven to 392°F.
Step 2
Prepare the cranberry filling: combine sugar, orange juice, and water in a small (1.5 L) saucepan. Bring to a boil. Add cranberries, orange zest, and cinnamon. Cook over medium heat for about 10 minutes, stirring until the mixture thickens, then cool (I blended it all with a blender).
Step 3
Make the cookie base: mix brown sugar and butter. Add the remaining ingredients and rub everything together until crumbly.
Step 4
Press ⅔ of the crumb mixture into a rectangular baking dish (approximately 33x23x5 cm). Press down. Spread the filling over the base. Sprinkle the remaining crumb mixture on top and press lightly.
Step 5
Bake for about 20 minutes, or until golden brown. Cool. Cut the finished bars into rectangular portions.
