Ingredients
- Dried cranberries with sugar - 3 oz
- Mandarins - 3 pieces
- Raw cane sugar - 2.1 oz
- Egg white - 3 pieces
- Cream (40%) - 7 fl oz
Step by Step guide
Step 1
Mix the juice of 1 mandarin with cranberries and 40 grams of sugar in a small saucepan and cook until it reaches a thick jam consistency. Divide into 2 heatproof pots and cool.
Step 2
Preheat the oven to 356°F.
Step 3
Combine the egg yolks with the remaining sugar.
Step 4
Place the cream and the zest of 2 mandarins in a saucepan and add the egg mixture. Set the saucepan over a pan of boiling water and heat until it thickens into a cream.
Step 5
Pour the cream into the pots and place them on a baking sheet half-filled with water.
Step 6
Bake for 10-15 minutes until the cream is slightly set. Cool.
Step 7
Sprinkle sugar on top and place under the broiler until the sugar caramelizes.
