- Mandarins - 2 pieces
- Dried cranberries with sugar - 12.3 oz
- Grated Ginger Root - 1 teaspoon
- Brown Sugar - 0.7 cup
- Light Raisins, Seedless - 3.4 oz
Step by Step guide
Step 1
Juice 2-3 large mandarins with thick skin to obtain 1/3 cup of juice, and peel a thin strip of zest (8x2 cm) using a vegetable peeler.
Step 2
In a medium heavy saucepan, combine the mandarin juice, finely julienned mandarin zest, fresh or frozen cranberries, ginger, raisins, and sugar. Bring the mixture to a boil over medium heat, stirring constantly until the sugar is completely dissolved, and then simmer for another 15-20 minutes.
Step 3
Wait for the cranberries to start bursting, remove the saucepan from the heat, and let the sauce cool completely.
Step 4
Serve with mascarpone, whipped cream, or as a standalone dessert.
