Cranberry Mousse
Ingredients
- Sugar - 10.6 oz
- Cranberry - 8.5 oz
- Water - 1 qt
- Semolina - 3.2 oz
Step by Step guide
Step 1
Wash the cranberries, pour half a cup of water over them, and blend using a blender or mash with a potato masher. Strain the resulting cranberry mixture through a sieve to separate the juice into a separate container, leaving the pulp in the sieve. Set the juice aside for now and pour 6 cups of water over the pulp.
Step 2
Place the pulp with water on the stove, bring to a boil, and simmer for another 5–7 minutes. Strain everything again through a sieve, place the resulting liquid back on the stove, and discard the pulp. Add sugar to the liquid and bring to a boil.
Step 3
Carefully add the semolina and stir thoroughly. Cook on low heat after boiling for about 20 minutes, stirring every 2–3 minutes.
Step 4
Slightly cool the mixture, add the cranberry juice that we set aside earlier, and whip with a mixer for 5 minutes.
Step 5
Divide the resulting mousse into glasses or dessert cups and refrigerate for a couple of hours.
