Ingredients
- Sugar - 1 tablespoon
- Salt - to taste
- Baking Powder - 1 teaspoon
- Milk - 8 fl oz
- Farm fresh eggs - 2 pieces
- Butter - 1.8 oz
- Cranberry - 12 fl oz
- Wheat Flour - 12 fl oz
Step by Step guide
Step 1
Preheat the oven to 374°F. Grease the muffin pan with butter or place paper liners in each cup.
Step 2
In a bowl, mix the flour, sugar, salt, and baking powder.
Step 3
Melt the butter. This can be done either in a water bath or in the microwave.
Step 4
In another bowl (preferably deeper), mix the melted butter, milk, and eggs.
Step 5
Combine both mixtures and stir well.
Step 6
Add the cranberries to the batter and mix. I used frozen cranberries.
Step 7
Fill the cups two-thirds full with batter and bake for 20–25 minutes until done, checking with a toothpick.
Step 8
Leave in the pan for a few minutes, then transfer to a plate. Optionally, you can sprinkle with powdered sugar.
