- Coarsely Ground Rye Flour - 1½ cups
- Non-Fat Dry Milk - ¼ cup
- Ground Oats - ¾ cup
- Sugar - 0.6 cups
- Baking Powder - 2 teaspoons
- Salt - ½ teaspoon
- Cranberry - 1 cup
- Chopped almonds - ½ cup
- Orange zest - 2 tablespoons
- Milk - ¾ cup
- Large eggs - 2 pieces
- Butter - 2.3 oz
- Orange juice concentrate - 2 tablespoons
- Powdered Sugar - 1 cup
Step by Step guide
Step 1
Preheat the oven to 374°F. Grease a muffin pan or place paper liners in each cavity.
Step 2
In a bowl, mix the flour, oats, dry milk, sugar, baking powder, and salt.

Add the finely chopped cranberries and walnuts.

In another bowl, combine the orange zest, eggs, milk, and softened butter. Lightly beat and gradually incorporate the dry ingredients.

Gently mix with a wooden spoon and distribute into the prepared molds, filling them three-quarters full.

Bake for 18-20 minutes until done and golden brown, checking with a toothpick.

Cool in the pan for 5 minutes and transfer to a serving plate.

Meanwhile, in a saucepan, mix the orange juice and powdered sugar. Heat until just below boiling, slightly cool, and brush over the warm muffins.
