You can use other berries. I also sometimes make it with cherries or strawberries.
Ingredients
- Cranberry - 14.1 oz
- Egg white - 2 pieces
- Margarine - 7.1 oz
- Sugar - 2 cups
- Wheat Flour - 2 cups
Step by Step guide
Step 1
Separate the egg yolks from the whites, placing the whites on the top shelf of the refrigerator.
Step 2
Beat the yolks with two tablespoons of sugar. Cut the margarine and add it to the yolks, then add the flour.
Step 3
Spread the resulting dough in a baking dish, raising the edges high to prevent the cranberries from leaking out. Place the crust in a preheated oven at 356°F.
Step 4
While the crust is baking, prepare the cranberries*. Add sugar to the cranberries to taste; I prefer it a bit tart, so one cup is enough for me. Next, prepare the cranberry puree. I don't use a mixer because I like to keep some berries whole, and this way the filling won't leak out.
Step 5
When the crust is golden brown, remove it and pour in the puree.
Step 6
Beat the egg whites with a mixer, gradually adding one cup of sugar. Spread the resulting mixture on top of the cranberries.
Step 7
Bake until the meringue is golden brown.
