Cranberry-Rosemary Wine Jelly
Ingredients
- Dried cranberries with sugar - 12 oz
- Sugar - 21.2 oz
- Fresh Rose Hips - 2 stalks
- Apple Wine - 13 fl oz
- Gelatin - 2 spoons
Step by Step guide
Step 1
In a large saucepan, combine cranberries, sugar, wine, rosemary, and 500 ml of water. Bring to a boil while stirring to dissolve the sugar. Then, simmer over low heat for eight minutes. Pour the mixture through a sieve lined with cheesecloth and let it sit for ten minutes to allow the liquid to drain into a bowl (discard the berry skins and rosemary). If you have more than four cups of liquid, reduce it to the desired volume. If you have less, add water; in any case, you should end up with about 800 ml of syrup.
Step 2
Combine gelatin and 200 ml of water in a saucepan and let it sit for a minute. Then, heat over medium heat, stirring until the gelatin dissolves. Pour into the berry syrup and mix well.
Step 3
Pour into a clean glass dish, using a spoon to skim off any foam from the surface. Cover the dish with plastic wrap and refrigerate for twelve hours.
