  • Kefir - ½ liter
  • Egg white - 1 piece
  • Salt - 1 teaspoon
  • Sugar - 1 teaspoon
  • Citric Acid - 0.4 oz

Step by Step guide

Step 1

Pour the milk into a pot and place it on the stove over medium heat. Constantly stir while adding salt and sugar, bringing it to a boil. Immediately after boiling, add the kefir and stir until the mixture curdles. Strain this mixture through cheesecloth, then hang it over the sink for 15 minutes to let the whey drain.

Step 2

Whisk the egg and a little citric acid well. Add the resulting curds to the whipped egg and whisk again until a smooth, fluffy mixture is obtained.
