Cream-Filled Pastry Tubes

Ingredients

  • Egg white - 1 piece
  • Water - 1 fl oz
  • Sugar - 3.5 oz
  • Egg white - 2 pieces
  • Puff Pastry - 2 pieces

Step by Step guide

Step 1

Roll each piece of puff pastry into a rectangle about 27–30 cm long.

Step 2

Cut into long strips about 2.5 cm wide.

Step 3

Cut triangles from parchment paper to form cones. These will be the future tips for the tubes.

Step 4

Wrap each strip around its cone, starting from the narrow end of the cone (the strips should overlap each other). Place on a baking sheet.

Step 5

Brush with beaten egg (yolk). Bake in a preheated oven at 356°F for 20–25 minutes.

Step 6

Prepare the meringue (Italian meringue). Heat water with sugar to a temperature of 244°F (or until a medium ball stage is reached). Whip the egg whites with a pinch of citric acid until stiff peaks form. Pour the syrup into the egg whites at high speed of the mixer. Whip until the meringue cools down.

Step 7

Transfer the meringue to a pastry bag and fill the tubes.
