Description

Regarding gelatin. It’s interesting to try sheet gelatin. Vegetarians may prefer the plant-based alternative to gelatin — agar-agar. You can choose the most suitable thickening option. Instead of cottage cheese, you can also use the traditional cream cheese for cheesecakes, like 'Philadelphia'. There’s always an alternative.

Ingredients

  • 10% cream - 5 fl oz
  • Semi-soft cream cheese - 17.6 oz
  • Butter - 2.5 oz
  • Bananas - 3 pieces
  • Shortbread Cookies - 7.4 oz
  • Cocoa Powder - 1.1 oz
  • Vanilla extract - ½ teaspoon
  • Nuts - 5.3 oz
  • Powdered Sugar - 1.8 oz
  • Gelatin - 0.5 oz
  • Multifruit Juice - 7 fl oz
  • Citrus Zest Mix - 0.5 oz
  • Water - 3 fl oz

Step by Step guide

Step 1

Prepare the base: crush the cookies into crumbs, mix with cocoa and melted butter. In a foil-lined mold (21 cm in diameter), form a traditional cheesecake crust with edges. Place the crust in the refrigerator.

Step 2

Separately prepare the gelatin: dissolve it according to the instructions (for 5 grams, about 100–150 ml of warm water is recommended) or soak the sheets.

Step 3

For the creamy filling, pass the fatty cottage cheese through a sieve, whip the chilled cream with powdered sugar and vanilla (if you don't have extract, a pinch of vanillin will do). Mix the ingredients until you achieve a uniform creamy consistency.

Step 4

Pour the cooled gelatin into the resulting cream and mix thoroughly.

Step 5

Assemble the cake: pour half of the cream into the bottom of the mold with the crust, layer half of the previously peeled and sliced bananas (you will need the rest later), sprinkle with some of the crushed nuts (almonds can be used if available), and cover with the remaining cream. Place in the refrigerator until set.

Step 6

For the top jelly layer: Take juice (orange, banana, or multi-fruit) with added citrus zest. Dissolve the remaining gelatin in the warmed juice and pour it through a sieve over the chilled cheesecake. Return to the refrigerator until set. For decoration, use the remaining bananas (sprinkled with lemon juice) and add nuts to taste.
